This Idli Dhokla is “fingers licking” good

This Idli Dhokla recipe makes a wonderfully soft and fluffy, lightly sweet and savory cake that’s perfect to enjoy anytime of the day. I personally like this recipe and I make it when I am bored with the rice and urad dal idli. It is instant, quick and more importantly healthy.

INGREDIENTS

  1. for idli dhokla:
  2. ▢1½ cup besan / gram flour
  3. ▢2 tbsp rava / semolina / suji (fine)
  4. ▢½ tsp ginger paste
  5. ▢1 chilli (finely chopped)
  6. ▢½ tsp turmeric
  7. ▢1 tsp sugar
  8. ▢pinch hing / asafoetida
  9. ▢¼ cup curd
  10. ▢2 tbsp oil
  11. ▢½ tsp salt
  12. ▢1 cup water
  13. ▢½ tsp eno fruit salt
  14. for tempering:
  15. ▢2 tbsp oil
  16. ▢1 tsp mustard
  17. ▢½ tsp cumin
  18. ▢1 tbsp sesame
  19. ▢pinch hing / asafoetida
  20. ▢3 chilli (slit)
  21. ▢few curry leaves
  22. ▢¼ cup water
  23. ▢1 tbsp sugar
  24. ▢¼ tsp salt
  25. ▢1 tsp lemon juice
  26. ▢2 tbsp coconut (grated)
  27. ▢2 tbsp coriander (finely chopped)

INSTRUCTIONS

  1. firstly, in a large bowl take 1½ cup besan, 2 tbsp rava, ½ tsp ginger paste and 1 chilli.
  2. also add ½ tsp turmeric, 1 tsp sugar, pinch hing and ¼ cup curd.
  3. now add 2 tbsp oil, ½ tsp salt and 1 cup water.
  4. whisk and mix well making sure everything is well combined.
  5. now add ½ tsp eno fruit salt and mix gently.
  6. mix until the mixture turns frothy.
  7. now immediately pour the batter into greased idli plate.
  8. place the idli plate in steamer and steam for 12 minutes.
  9. now prepare the tempering, heat 2 tbsp oil.
  10. add 1 tsp mustard, ½ tsp cumin, 1 tbsp sesame, pinch hing, 3 chilli and few curry leaves.
  11. stir and splutter the tempering.
  12. now pour ¼ cup water, 1 tbsp sugar, ¼ tsp salt and 1 tsp lemon juice.
  13. mix and boil making sure everything is well combined.
  14. pour the tempering over the idli, make sure the water is absorbed by idli.
  15. garnish with 2 tbsp coconut and 2 tbsp coriander.
  16. finally, enjoy idli dhokla with green chutney.
